Apple and Pear Bread Pudding

This recipe I’ve broken up into two pieces, the base bread pudding and the different sauces that can be used to top it.

Bread Pudding

Ingredients

  • 1 loaf of french bread
  • 3 cups of milk
  • 3 eggs
  • 1/2 tsp vanilla extract
  • 2 Granny Smith apples, 2 pears (or some combination of apples and pears totaling 4)
  • butter
  • cinnamon
  • sugar
  • Pernod
  • ground ginger
  • raisins
  • rum

Directions

Tear the french bread into pieces (I prefer them to be about 3 to 4 inches cubed) and place into a bowl.  Take the milk and scald it then pour it over the bread and let it sit.  Next, take the raisins and pour rum over them until rum covers all the raisins.  Place the rum and raisins mixture in the microwave and heat for about a minute then set them aside.  Take the fruit, peel and dice or cut into slices.  Next find a pan and place it over medium heat.  Put the fruit into the pan and let it cook down then mix in sugar and cinnamon (as much as you’d like) and a tsp of ground ginger continuing to cook them over medium heat.  Before you remove the pan from heat, put some Pernod into the mixture and stir it around (Pernod is optional).  Now beat together eggs, sugar, and vanilla, then pour the rum and raisins into the mixture.

Find a baking dish and butter it then pour the bread into the dish, pour the eggs and raisins mixture in, finally pour the fruit in.  Mix the ingredients in the dish getting them all equally distributed.  Bake the pudding at 350F for 50 minutes.


Sauces

Clear Rum Sauce

Ingredients

  • 1 cup sugar
  • 2 1/4 cup water
  • 1 teaspoon ground cinnamon
  • 1 tablespoon unsalted butter
  • 1/2 teaspoon cornstarch
  • 1 tablespoon rum (light or dark)

Directions

In a medium size sauce pan combine sugar, 2 cups of water, cinnamon, and butter then bring to a boil.  Stir in cornstarch blended with the remaining 1/4 cup of water and simmer, stirring until the sauce is clear.  Remove from the heat and add the rum.  The sauce will be thin.

Whiskey Sauce

Ingredients

  • 6 tablespoons of butter softened
  • 1 1/2 cups of sugar
  • 2 tablespoons of whiskey
  • 1/4 cup of water

Directions

Mix butter and sugar until light and fluffy, then gradually add whiskey and water.  Beat it 5 minutes then place in a small sauce pan over medium heat and cook until butter is melted and sugar is dissolved or for 10 minutes.  If you are using a mixer, mix on medium speed.
