Apple Pie

On this recipe I’ve broken it down into the three different components: crust, filling and pie topping.  Feel free to take and use or discard the parts as you see fit.

Crust


Ingredients

  • 3 tbsp flax meal
  • 3/4 cup almond flour
  • 1/4 tsp salt
  • 6 tbsp butter
  • 1/3 cup sugar (or Splenda)

Directions

Preheat over to 375F.  Mix flax meal, almond flour and salt.  Melt butter in the microwave then stir in the sugar.  Now mix the flax meal, almond flour, salt, sugar and butter together thoroughly.  Spread the batter out into a 9″ pie plate and cook it for around 12 minutes or until the crust is firm and a bit brown, let it cool before using.

Filling


Ingredients

  • 8 Granny Smith apples, peeled, cored and cut into 1/4″ slices
  • Juice of 4 lemons
  • 4 tbsp unsalted butter
  • 4 tbsp light brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 4 tbsp Pernod

Directions

First, put the apples in a bowl and toss them with the lemon juice.  Then heat a pan over medium heat and add the butter and when it begins to sizzle, add 12 tbsp of water and reduce the heat to low.  Add the brown sugar, cinnamon, and ginger.  Stir it and let cook for 30 seconds to a minute.  Then add the apples to the pan and stir them until they begin to soften (two to three minutes).  Take the apples out and move them to a plate.  Put the heat back to medium and add the Pernod.  Bring it to a boil then simmer on low heat for three minutes.  Drizzle the syrup over the apples.

Topping


Ingredients

  • 3/4 stick (6 tbsp) unsalted butter
  • 6 tbsp almond flour
  • 6 tbsp all-purpose flour
  • 6 tbsp sugar

Directions

Melt butter in the microwave, then combine with almond flour, all-purpose flour and sugar.  Work the mixture with your fingers until it becomes a dough.  It is then able to be used.

The Apple Pie


Make the pie crust and set it aside to cool down.  Once it begins to get cool make the filling.  When the filling is complete, put it into the crust and then make the topping.  After the topping is placed onto the pie, bake at 350F for 45 minutes or until the topping begins to turn brown.
