Peach Cobbler


  • 3 cups diced peaches
  • 1/4 cup of sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 1/3 cup sugar
  • 2 tsp cornstarch
  • 1/4 stick unsalted butter
  • almond flour
  • all-purpose flour
  • sugar
  • non-stick cooking spray


Preheat the oven to 375F.  Make the filling by combining diced peaches, 1/4 cup of sugar, 1tbsp lemon juice and 1 tbsp cornstarch.  To make the topping combine equal parts sugar, almond flour, all-purpose flour and butter into a bowl and work until it becomes a dough.  I’ve used 8 tbsp of each.  Take a 9×13 baking dish and spray with a nonstick cooking spray.  Put the peach mixture into a dish and evenly distribute it.  Then place the dough topping over the peaches.  Bake the cobbler until the topping is golden and the fruit is bubbling, which should be 45 minutes.
